Chef Luis Martinez, who made a reputation locally from cooking simple but fresh Spanish fare at Siargao’s Alma, has set foot in Manila for a more elevated dining experience. He has since called his private little settlement “Terraza Martinez,” fittingly enough.

The Bonifacio Global City-based dwelling hopes to answer what has long been cumbersome about cuisine that intends to reflect the Spanish experience locally.

“Spanish dining in Manila has always felt a little landlocked. With a spirit of adventure, however, Terraza Martinez takes our appetites on a trip to the Spanish Mediterranean,” Terraza Martinez’s management wrote.

The restaurant features traditional cooking techniques matched with only the freshest seasonal ingredients. It serves as the personal venue for its 36-year-old chef to serve up the coastal cravings of his motherland. From the tapas to the paellas, he has epicurious Filipinos covered.

Not least of which is the Paella Valenciana, which Chef Luis already mastered in his family’s kitchen at age seven. Of course, the world-renowned dish is only his hometown’s beloved staple.
