Michelin-Starred Chef Guillaume Roget Brings His Culinary Prowess to Mirèio - Dine

Known for its modern French-Mediterranean fare and inviting prominent international gastronomic talents for exclusive bespoke dinners, Mirèio once again brings another culinary powerhouse to their kitchen with Chef Guillaume Roget at the helm. An exclusive dinner filled with Roget’s signature flair for Southern French flavors awaits guests for a limited time from November 27-29.

A trained sommelier before pursuing his career as a chef, Roget combines his Basques-Souletines roots with his mastery of wine to create his inventive and uninhibited culinary philosophy. His distinct culinary style has earned him a Michelin star with his restaurant Le Brouillarta in Saint-Jean-de-Luz, France. Self-taught and passion-driven, he visits Manila with  a season-inspired five course dinner that will delight and surprise guests with a mix of French and Spanish flavors.

The premier dinner will consist of the best of the earth and sea, starting with Torched Rare and Wild New Caledonian Blue Prawn, Broccoli emulsion, Mushroom and Pine Nut broth. Next will be a rich serving of Pan-seared French Foie Gras with Chestnut and Lemon Verbena-scented Jerusalem Artichoke purée. Returning to the sea for the next dish, you get a medley of flavors with Grilled Sea Bass, Chorizo Iberico enhanced Razor Clams, and Crunchy Cauliflower Risotto. A meaty dish follows with Australian Wagyu Beef Tenderloin Celeriac Confit, Sweet Onion Foam, and Périgord Black Truffle. And for dessert, a special Chef Roget’s Coffee and Chocolate “conception.” As a given with any Roget culinary creation, each dish will come with a wine pairing to create a full experience.
