Celebrate Women’s Month With a Unique French-Mexican Dinner by Chef Beatriz Gonzalez at Mireio in Makati - Dine

Serving up a limited dinner series at Mireio, Michelin-recognized Chef Beatriz Gonzalez brings her unique flavors to Raffles Makati.

The coming of March marks the beginning of many things: the dawn of summer, the month of daffodils, and most importantly, National Women’s Month. With many celebrations on the power of the woman left and right, Raffles Makati highlights this month of female empowerment in the most delectable way with an exclusive dinner series by Guest Chef Beatriz Gonzalez. On March 10, 11, and 12, Mirèio will host Chef Beatriz and her distinct cuisine that mixes the refined subtlety of French fare with the zesty freshness of Mexican culture.

A Mexico native herself, Chef Beatriz was trained at Paul Bocuse Institute where she sharpened her skills on French techniques. After which, she got her start at the Michelin-starred La Belle Otero (now Carlton) in Cannes. Her career spans stints in Italy and Mexico where she has built a unique fusion style of French and Mexican flavors. She opened her own restaurants, Néva Cuisine and Coretta, in Paris and has since established herself as a gastronomic tour de force with her unique flavor, continuously breaking new ground with her creativity, which we will experience at her limited guesting at Raffles Makati.

The five-course dinner will start with a Garden of Flowers, a dome of sea bream ceviche, leche de tigre, confit lime emulsion adorned with fresh flowers. Next is a pasta dish of Australian braised oxtail ravioli topped with an espuma of Mexican molé verde. For the meaty mains we have the roasted Mediterranean sea bass, smoked beetroot with mushroom and beef jus; followed by the seared French duck breast served with thinly sliced pressed potatoes, fresh wasabi, and shallots on the side. Right before the dessert a Mezcal will be served, to cleanse the palate from the richness of the previous dishes, before capping off with Pavlova mango with extra virgin olive oil.
