Cicchetti Meets Pintxos In This One-of-a-Kind Dinner

Taste the mouthwatering fusion of Italian bites and flavorful Pintxos

Boasting a wide range of Italian fare, Cicchetti continues to invent itself with new creations for both loyal and new patrons. If you have fallen for their flavorful bite-sized namesake, you have to look forward to indulging in their latest collaboration. Cicchetti’s Chef Kim Suva partners with Chef Mikel Martija of MIMO San Sebastián to create a delectable six-course dinner. Prepare to taste Pintxos of succulent flavors and different textures to satiate your appetite for a savory feast.

The masters of taste

Chef Martija’s beginnings trace back to Spain, the culinary capital of the world. Having worked with Michelin star restaurants in San Sebastián like Arzak and Elkano, he was able to hone his cooking experience of the Basque cuisine. At present, one can find him in Mimo San Sebastián, a school for culinary and wine tours. He shares the fascinating art of creating pintxo or the Basque-style tapas. From his background alone, it’s no wonder Cicchetti chose to collaborate with him.

Creating the gastronomic experience would not be complete without Cicchetti’s Sous Chef, Kim Suva. Growing up in Pampanga, she came to learn about creative and exotic dishes one can make. Harnessing experiences from her stints in The Goose Station, The Hungry Hound, and Wildflour, chef Suva currently shares her creative mind to Cicchetti.

Together, they created Pintxos that combine tastes and textures like those of Spanish ham, anchovies, chorizo, cheese or wild mushrooms.

A taste of Basque

For the six-course dinner, the two chefs prepared their own masterful creations. It starts with Cicchettis in a choice of Salsiccia or Bresaola followed by Foie Gras Frito and Gamberri Insalata or prawn salad. For the main courses, there are Tortellini De Txangurro or crab drizzled in almond cream sauce and Guance Di Manzao or sous vide beef cheeks. Each dish is paired with select wine like Cloudy Bay Sauvignon Blanc and Masotinna Prosecco. You also have the option to indulge in the chefs’ delightful sweets like Chocolate Panna Cotta and Torrija or soaked bread with cheesecake ice-cream.

These sumptuous courses will certainly surprise you with the wonderful fusion of Italian cuisine and Pintxos. Cicchetti may be the Italian translation for “small bites” yet your appetite will certainly be filled with the creations from this unique collaboration.
