Dine and Dance: You Can Consider This Makati Spanish Restaurant for Your Next Lunch Spot or Friday Night Out - LA Wine & Dine

On Friday nights, Pablo hosts “Destino Pablo,” when DJs like David Yulo, Shrugs, Bad Kiss, and Margáchi take the decks.

Since November 2014, Pablo has been serving up Spanish dishes amid an ambiance where friends can catch up and unwind. Located at Makati’s Salcedo, it’s also a neighborhood jaunt in which its surrounding residences frequent. 

Since its opening, the Thin House paellas, steaks, Tapas, Goat Cheese Salad, House Smoked, and brisket sandwich has served as crowd favorites. In fact, the menu was developed by Pablo’s owner and chef, David Collado, who took inspiration from his travels to Spain and other culinary hotspots.

However, while the F&B industry was forced to shift its gears during pandemic restrictions, the Spanish restaurant was no exception. As a result, Pablo offered their menu items at their sister outlet, Cartel Coffee Deli. Once restrictions slowly lifted to permitting outdoor dining, they came up with “Destino Pabo,” a concept that started to provide entertainment in the alfresco area—European style.

The right vibe

Come nightfall, Pablo transforms into a “Destino Pabo” on Fridays—a bar-like atmosphere with a DJ. “it’s a place where good friends come and see each other after a long week, where new friendships are and where old friendships get nurtured and grow deeper,” Rocio Mari of Pablo PR and marketing tells Lifestyle Asia. “A place where you see familiar faces all the time.” 

The music is carefully curated, with DJs like David Yulo, Shrugs, Bad Kiss, Emel Rowe, David Jacobs, and Margáchi hitting the decks. According to Rocio, they select DJs that can mix European-influenced sounds, such as Balearic beats.

“At the end of the day, we want to create a relaxed, sophisticated atmosphere that is cozy and warm with quality food, quality of service, and a place for everyone to meet and coexist happily,” Mari concludes.
