Tapenade brings the bold and savory flavors of the Mediterranean region with their new menu

For connoisseurs and enthusiasts of Mediterranean cuisines in the country, you may only have select places where you can indulge in this fare. Discovery Primea in Makati prides itself on being one of the few hotels in the country with a restaurant offering an authentic taste of the Mediterranean. Since its inception, the all-day Tapenade restaurant presents a variety of exciting dishes. Recently, they enhanced their menu with new courses to try. We’ve listed five dishes, each celebrating summery flavors that seemingly transport you to the region of sun and crystalline lapiz waters.

Mozzarella & Friends

Tapenade’s menu starter section features a selection of antipasti and mezze. The crisp triangular-shaped pita complements the soft texture of the mozzarella. When you dip it into your choice of sauce—basil pesto, black olive tapenade, romesco dip, or fruit mostarda, you get a delightful mixture of flavors that prepares your palate for the rest of the courses.

Shrimps En Gabardina

While most Japanese-style tempura uses ordinary batter, this Spanish style tempura mixes a variety of herbs and seasonings to achieve an exciting punch of spicy taste. Partnered with Guindilla aioli dip, its garlic flavor supplements the hot chile profile of the tempura. It’s the perfect reflection seaside flavors, propelling your taste buds for the rest of the Mediterranean dishes.

Red Snapper Fillet

A variety of flavors and textures makes this fillet truly unforgettable. For starters, the snapper absorbs the rich spiced tomato broth well. For every bite, the broth oozes and bursts into your mouth. The fried potato rings add crunch while the slices of pita balance the overall savory taste.

Wagyu Beef & Mushroom Paella

For fans of paella, Tapenade offers a choice between wagyu beef and roasted chicken. Cooked until it reaches a medium level of tenderness, each strip of wagyu beef trickles with its juices, attesting to its fresh and premium quality. Mixed with black pepper aioli and served with pan-fried rice, this paella certainly satisfies your appetite for heavy dishes. For the option of chicken, the strips are equally delicious. The well-cooked chicken meat and its slightly crisp skin enhance the chewy texture of the rice, adding a different texture to your meal.

Almond and Caramel Bar

Sweet options on Tapenade’s menu include this delightful bar. Taking a Dacquoise approach, the bar alternates between the sesame nougat and amaretti crunch. This layering staves off the dessert from tasting too sweet, the perfect meal-ender for those without a sweet tooth. What makes the bar more special is how the nougat contrasts the soft texture of the mousse. This allows a luscious balance of flavors that melts in your mouth.
