Following their tradition of creating bespoke culinary experiences to the Philippine market, French luxury hotel Sofitel Philippine Plaza Manila has special treats lined up for dad this coming Father’s Day Weekend. Their famous Spiral buffet is offering a Father’s Day Weekend Brunch promo, while other signature outlets are joining in on the fun as well. Spiral’s Father’s Day Weekend Brunch (June 15-17, 2018)

Master Chefs at Spiral are changing it up this weekend, creating a menu tailor-made for dad’s palette. This they will do by asking their roster of master chefs to create and share their dad’s favorite dishes. Japanese Master Chef Masaaki Ishigawa will be creating a savory beer flavored crispy chicken karaage. Marinated in salt, pepper, rice wine and soy sauce, it will be paired with a tall glass of ice-cold beer. Meanwhile, Chef Dennis Macaranas, the hotel’s in-house Thai master artisan will be putting his own spin on a Bangkok-style beef tenderloin. Bistek (beef steak) is his father’s favorite food, whenever they’d share a drink together. He adds 5 aromatic Thai spices, resulting to a flavorful and tangy finished product.

Over at the Indian atelier, Chef Halim Ali Khan will be cooking his Sikandari Raan (or Roast Lamb) served with the crowd favorite Biryani Rice. Historically served during Eid al Adha, the chef says his father taught him how to cook the lamb leg in his youth. It is marinated overnight in over 10 to 12 Indian spices, before slow-cooked a day before it is baked. The result: a tasty, tender lamb did that Pop’s will love. In additional, the Biryani rice has been cooked in the remaining stock from the lamb!

The Dragon Ball Lettuce of Chinese Master Chef Michael Tai is ideal for children accompanying dad to the buffet. The seafood balls wrapped in lettuce is a new culinary experience for kids. Chef Tai explains that his father disguised vegetables through this dish when he was a kid so that he could enjoy it. Now he’d like to share this with younglings and their dads this year at Sofitel. For a richer experience, make your way to Chef Julien Cossé’s French atelier and try his Steak a Cheval. Chef Julien remembers his father truly enjoying the protein-rich steak dish when returning home from a tiring day in the newspaper industry.

Chef Lorvin Gesite, the Korean Culinary Artisan Chef, is showcasing his Bossam, a colorful dish of boiled Korean pork belly to be paired with some Soju rice wine. Sinuglaw, a Filipino version of Ceviche with a twist, will be the special menu item by Filipino Master Chef Bryan Ortigosa. His father used to take him to the wet market as a kid, and together they would buy fish to enjoy together, one part grilled and one part fresh and raw, eaten like sushi. He now dubs the dish as Sinuglaw, a combination of the Filipino words Sinugba (grilled) and Kinilaw (eaten raw).

Father’s Day will never be complete without a selection of Sofitel’s delicious confections. Pastry Chef Rolando Macantagay whips ups his decadent Chocolate Mudslide Cake infused with Bourbon, as a special treat for dad. In additional, those celebrating dad this weekend will receive gifts from Uniqlo. The best-dressed fathers will receive a prize from Peter Thomas Roth, Jack Nicklaus, Champion, and Saville Row on Father’s Day Brunch on June 17, 2019.
